So, this is a recipe that my mom makes for most parties that she is hosting. It is one of my favorites and is very quick and easy to make. However, I would recommend that you make it when you are entertaining in your own home. It doesn't transport very well, and is much better served right out of the oven, rather than cooled down.
INGREDIENTS:
1 lb. whole mushrooms (caps and stems)
8 oz spicy sausage (I just get the Jimmy Dean brand)
8 oz cream cheese (room temp)
TO MAKE:
Preheat oven to 350 F.
Cap the mushrooms and save the stems. Once all mushrooms are capped finely chop stems (or use a food processor) and set aside.
Brown sausage, about 10 min. Using slotted spoon to drain grease, mix sausage, cottage cheese and stems until combined.
Stuff mushroom caps w/sausage mixture and place in a 9 x 13" pan or shallow cookie sheet. May not hurt to line the pan w/aluminum foil, although clean up is usually fairly easy.
Bake @ 350 for 25-30 min or until sausage mixture is slightly browned on top.
